Brioled Tilapia

This is one of my husband’s favorite dishes, and I love it because it’s so stinkin’ fast!  This is simple Broiled Tilapia that takes less than 10 minutes to prepare.  I’m aways looking for quick and easy ways to get more fish in our diet using everyday ingredients, and this recipe does that.

Serves 4

Ingredients:

4 – 5 oz Tilapia Filets
1/4 Cup Light Mayo
1/4 Dried Bread Crumbs (Whole wheat is great)
3 Tablespoons Green Onions, chopped
1/4 Cup Parmesan Cheese, freshly grated
2 Tablespoons fresh lemon juice
1/2 tsp Salt
1/2 tsp Pepper
Directions:

1) Preheat Oven to Broil

2) Mix all ingredients together except Tilapia

3) Place filets on a baking sheet and spread evenly with mayo mixture, does not have to cover completely

4) Broil for 5 minutes, if filets are larger than 6oz cook for 2-3 more minutes at 350 after broiling to cook fish through

5) Cool for a couple of minutes and serve, enjoy!

What a beautiful dish this is.  One of my favorite things to make in the spring/summer is different kinds of salsas.  They are so colorful and fresh, and by using this one as a topping for tilapia, you have a very healthy dish that looks gorgeous!  Of course you could substitute peaches for the nectarines if you couldn’t find them.

Ingredients:

Serves 2-3

  • 12 oz Tilapia Filets
  • 3/4 tsp each of salt and pepper
  • 1 tsp each of: Cumin, Garlic Powder, Onion Powder, Paprika
  • 1/2 tsp Oregano
  • 1/8 tsp Cayenne Powder
  • 2 Tbls Canola Oil

Directions:

  1. Mix all seasoning together in a small bowl
  2. Gently rub onto each tilapia filet and on both sides
  3. Heat a heavy bottomed skillet, preferably a cast iron, to medium high heat
  4. When pan is really hot add oil, then add fish, cook for about 2 minutes per side
  5. Serve with Salsa!

For the Salsa

  • 1 Nectarine, unpeeled and chopped
  • 2 Tomatoes, remove seeds and veins and chop
  • 1/2 jalapeno, minced
  • 2 tbls each chopped fresh basil and chives
  • 2 tbls lime juice
  • Salt and Pepper to taste

Directions:

  1. Gently toss all ingredients together, and chill about 20 minutes before serving to allow flavors to marry.

Coconut Shrimp

What could be better in the summertime than this tropical Coconut Shrimp recipe?  You may have had Coconut Shrimp in a restaurant before, but it was probably deep fried, well not this recipe!

This baked version of the recipe could not be more delicious, and you defnitely won’t miss the fat and calories from frying.

Makes 4 Meal Servings, or 6-8 Appetizer Servings

Ingredients:

  • 1 lb Large Shrimp, shelled with tail on
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1 tsp Paprika
  • 1/2 Cup All Purpose Flour
  • 2 Eggs, lightly beaten
  • 1 1/2 Cups Unsweetened, Flaked Coconut
  • Nonstick Cooking Spray

For the Orange Marmalade Dipping Sauce:

  • 1 Cup Orange Marmalade
  • 2 Tbls Rice Vinegar (or Apple Cider vinegar)
  • 2 tsp Horseradish
  • 2 tsp Dijon Mustard
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Directions:

  1. Place shrimp in a bowl and add salt, pepper, paprika, and garlic powder.  Mix together gently.
  2. In three seperate plates or shallow bowls fill one with the flour, one with the eggs, and one with coconut.
  3. Dip spice coated Shrimp with flour, then egg, then press in coconut on each side of shrimp. Place coated Shrimp on a baking sheet coated with nonstick spray.
  4. Once all Shrimp are coated, spray Shrimp evenly with nonstick spray.  Then bake at 425 degrees for 15 minutes.
  5. While Shrimp are baking mix together orange marmalade, rice vinegar, dijon, horseradish, salt and pepper in a small bowl.
  6. Once Shrimp are baked serve with the dipping sauce.

When I was growing up one of my mom’s go-to dinners was Salmon Cakes.  They were easy to make, inexpensive, and we all really enjoyed them.  Now that I am married, I have continued to make this meal for my family.  I almost always have canned salmon or tuna in my pantry, and it has become my go-to dinner when I haven’t been to the grocery in a while.

I decided to dress up our beloved Salmon Patties this week by adding a few special ingredients as well as a light, Lemon Dill cream sauce.  With a few simple additions, this main dish goes from something I make when options are limited, to a dish I would be proud to serve to guests.  If you prefer to use fresh Salmon that you cook yourself that is another great way to take this up a few notches.

This is a meal that will keep your family eating healthy, and it will take you about 10 minutes to whip up.   Enjoy!

Makes 8 Cakes

Ingredients:

  • 12 oz Canned Salmon, drained
  • ½ Cup Onion
  • 1 Garlic Clove, minced
  • 1 tsp Seasoned Salt
  • ½ tsp Black Pepper
  • 1 tsp Worcestershire Sauce
  • 3/4 Cup Panko Bread Crumbs
  • 2 Eggs
  • 1 tsp lemon Zest
  • Extra Virgin Olive Oil

For the Sauce

  • ½ Cup Light Sour Cream
  • 1 TBLS fresh Lemon Juice
  • 1 Tbls Fresh Dill, chopped
  • 1 tsp Honey
  • Pinch of Salt and Pepper

Directions:

  1. Soften onions and garlic over medium heat for about 5 minutes in a skillet with a teaspoon of olive oil
  2. In a bowl mix together Salmon, cooked onion and garlic, salt, pepper, Worcestershire, panko, eggs, and zest.
  3. Form mixture into patties and place in a skillet over medium high heat with 1 tablespoon of olive oil.
  4. Cook for 3 minutes and flip, cook for another 2 minutes adding more oil if needed.
  5. Meanwhile mix together the sauce ingredients.  Once Salmon Cakes have cooked, top with Lemon Dill Sauce

shrimp scampi

Seriously, if this is what eating healthy looks like, I’m all over it!  This main dish takes about 10 minutes to prep, then 10 minutes to bake, and you will be eating a homemade, gourmet meal in no time.  It really is easy to cook yourself healthy!

Baked Shrimp Scampi

Serves 4

Ingredients:

  • 1.5 lbs large, raw shrimp
  • 1 tbls butter
  • 1 tbls extra virgin olive oil
  • 1 minced shallot
  • 2 minced garlic cloves
  • 1-2 tbs lemon juice
  • 2-3 tbls white wine
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/3 cup feta cheese

Directions

  1. Preheat the oven to 425 degrees
  2. Place the butter in a dish with the garlic and shallots and microwave for 1 minute.  Add the oil and set aside.
  3. Place the shrimp in a baking dish and toss with the butter mixture.  Add the lemon juice, wine, salt, and pepper to the shrimp and toss to coat.
  4. Crumble the feta cheese evenly on the shrimp and bake for 10 minutes.
  5. Serve over quinoa, brown rice, or spaghetti.  Be sure to pour the cooking juices over the grains or pasta for extra flavor.
