Lentil Stew

This was inspired by a stew I had at Carrabba’s Italian restaurant.  I just lightened it up with  turkey sausage and made it in the Slow Cooker.  It’s also Gluten Free!!


Serves 4

Ingredients:

  • 1 lb Turkey Sausage
  • 2 Carrots, chopped
  • 2 Celery Stalks, chopped
  • 1 Onion, chopped
  • 2 Garlic Cloves, minced
  • 1 Can Diced tomatoes
  • 1 1/2 Cups Dried Lentils
  • 1 Quart Chicken Stock
  • 2 Cups Water
  • 1 tsp Italian Seasoning
  • 3/4 tsp Thyme
  • 3/4 tsp Salt
  • 1/2 tsp Pepper
  • 2 Cups fresh Spinach
  • Optional: Fresh Parmesan Cheese

Directions:

  1. Brown sausage until cooked completely
  2. Place all ingredients except Spinach in crock pot
  3. Cook on high 3-4 hours, low 6-7 hours
  4. Before serving, put spinach in crock pot and stir until wilted, serve stew with bread and fresh Parmesan cheese
