If you are looking for the perfect “game day” recipe without all of the fuss, here it is! I have always been a fan of chicken legs, the meat is so rich and moist, and they even come with a handle for easy eating. This recipe can be easily doubled or tripled for a crowd, making it ideal for football time in Tennessee!
I will actually be making this recipe Monday, September 8th on Channel 5’s Talk of the Town live at 11am. You will definitely want to watch, I mean it’s not everyday you get to see an almost 9 month pregnant lady makin chicken legs on TV, ha! It should be quite a site, but I am excited to get in one last appearance on TOTT before this little boy comes in October.

Oven Baked Maple BBQ Drumsticks
makes 6-8 drumsticks
Ingredients
For the Drumsticks
2 pounds chicken drumsticks
1 tablespoon canola or vegetable oil
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
For the Maple BBQ Sauce
1 tablespoon canola oil or butter
1/4 cup onion, chopped
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Maple Syrup
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 teaspoon Worcestshire sauce
Directions
Preheat the oven to 425 degrees.
In a large bowl toss together the drumsticks with the oil, salt, pepper, onion powder, garlic powder, and paprika.
Place a wire rack over a large jelly roll pan and spray it with nonstick cooking spray. Arrange the drumsticks on the rack and bake them for 20 minutes.
Meanwhile, add the oil or butter to a saucepan over medium heat and then add the onions. Let the onions cook for about 5-6 minutes, until they begin to soften an then add in the ketchup, brown sugar, Maple syrup, cider vinegar, Dijon, and Worcestershire sauce. Stir the sauce together all it to cook over medium heat for another 5 minutes.
Once the chicken has baked for 20 minutes, remove it from the oven and dip each piece in the barbeque sauce and then place them back on the rack. Bake the coated chicken for another 15 minutes.
Meanwhile reheat the remaining sauce for dipping once the chicken has cooked. Allow the chicken to cool slightly before serving.

In honor of my Youtube Channel reaching over 500,000 views, I decided to begin a new series of videos outside of the kitchen, just me…in real life! Okay y’all, it’s early, it’s still August for crying out loud, but everyone is pinning pumpkin recipes already! Even though I have never been one to wish summer away, our little man is due to arrive October 10th, therefore I am also craving Fall this year more than ever. So here it is, my first Pumpkin recipe of the season!
One of the recipes I make every Fall are my Pumpkin Chocolate Chip Cookies. However, I have changed them up a bit this year and come up with these DELICIOUS Pumpkin Monster Cookies! These babies are filled with pumpkin, oats, chocolate, and butterscotch chips. They are even lower in fat with a little help from some unsweetened apple sauce.
Whip these cookies up for Labor Day, a tailgating party, or any fall themed event for a quick and easy cookie that everyone will love!
Pumpkin Monster Cookies
makes about 2 dozen cookies
Ingredients
1 cup Canned Pumpkin Puree (not Pumpkin pie mix!)
1 cup Sugar
1/4 cup Canola Oil
1/4 cup Unsweetened Apple Sauce, you may substitute another 1/4 cup of oil for this, but they won’t be low fat any more 🙂
1 teaspoon Vanilla
1 egg
2 cups All Purpose Flour (may substitute white whole wheat flour)
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cinnamon
3/4 cup Rolled Oats
1 cup Chocolate Chips or Butterscotch chips, or 1/2 cup of each
Directions
Preheat oven to 350
Combine the pumpkin, sugar, oil, apple sauce, vanilla and egg in a bowl.
In a separate bowl whisk together flour, baking powder, baking soda, salt, and cinnamon
Add the flour mixture to wet just until combined, and then fold in the oats chocolate and/or butterscotch chips.
Spray cookie sheet, drop heaping tablespoons of dough on the sheet, and bake at 350 degrees for 10-12 minutes, the cookies will look soft but they are definitely done at 12 minutes!

Who didn’t love those frozen pepperoni pizza rolls as kid?! I know I did, but those deep fried little nuggets probably aren’t the healthiest after school snack. So I have come up with these easy, cheesy homemade pizza rolls that are so quick to make and bake!

Pepperoni Pizza Rolls – Madeover!
makes 8 rolls
Ingredients
2 whole wheat tortillas
1/4 cup jarred marinara sauce
1/2 cup shredded mozzarella cheese
12-14 pepperonis
Optional: 1 tablespoon fresh basil, chopped
1 tablespoon extra virgin olive oil
1 tablespoon parmesan cheese
Directions
Preheat the oven to 350 degrees.
Spread the sauce evenly onto the tortillas leaving about an inch around the edges.
Sprinkle on the mozzarella, and then place the pepperonis and basil (if using) on top of the cheese.
Roll the tortillas up tightly, brush the tops with the oil, sprinkle on the parmesan, and then cut each roll into 4 sections with a sharp knife.
Bake the pizza rolls for about 8 minutes on a sheet pan, cool slightly, and enjoy!

Corny Bacon and Tomato Quinoa Salad
serves 4-6
Ingredients
1 cup Quinoa, rinsed
2 cups low sodium chicken stock or broth (may sub water)
1 garlic clove, smashed
4 slices bacon
2 cobs of corn, shucked
1 cup cherry tomatoes, halved (may sub regular tomatoes, chopped and seeded)
2 tablespoons fresh basil, chopped
1/4-1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon juice
1 tablespoon extra virgin olive oil
Directions
Place the quinoa, chicken broth, and garlic in a saucepan over high heat. Bring this to a boil, reduce the heat, cover, and cook for 12-15 minutes, until the liquid is absorbed.
Cook the bacon in a large skillet until crisp, and then drain all but a teaspoon or 2 of the drippings from the skillet. Chop the bacon and reserve for later.
Meanwhile, cut the corn off of the cobs, and add it to the drippings along with another teaspoon of canola or olive oil over medium heat. Cook the corn for 4-5 minutes until it begins to caramelized.
Turn the heat off and add the cooked quinoa, tomatoes, basil, salt, pepper, reserved bacon, lemon juice, and oil to the corn. Stir everything together until it is well combined. Serve this warm or at room temperature.
